suuuper productive weekend. actually worked in the yard.
surprised myself because 1. i hate yard work, and 2. my back was cooperating.

for those unaware of the saga that is my back - i have degenerating, protruding, and extruding disks.
weeks of physical therapy without any progression.
first of three epidural steroid injections in the books. second is coming this friday.
it sucks, but i'm getting by.

anyway, got a low census day today. so i'm trying to get some stuff done that i didn't get to this weekend.

looking for some chicken recipes. got any ideas?

  1. This is a good one.

    Ranch chicken
    8 boneless, skinless chicken breasts
    1 cup crushed corn flakes
    1 cup grated parmesan cheese
1 envelope Hidden Valley* ranch dressing mix
    1/2 cup melted butter

Combine crushed cornflakes, parmesan cheese, and ranch dressing mix in a shallow bowl. Dip chicken in melted butter, then roll in cornflake mixture. Place in greased baking dish. Bake uncovered at 350 for about 45 minutes (or until chicken juices run clear).

*You must use the Hidden Valley ranch mix. I've tried others and it's not near as good.
